My A10 Spitfire, when raised onto its center stand makes a knocking sound from both forks, I assume this is due to the weight being taken off the forks and imagine the sound is due to them topping out on their stops.
Is this norrmal?

Yep ,
And it is even worse when you are on rough road.
That is why a lot of A 10 owners fit latter model double damped forks.
Paul Geoff also sells a double damping kit that will go straight into your forks.
