The brake re-lining specialists will measure your drum them put the re-lined shoes on a face plate and turn them to fit. But that means you have to take the wheel. Mintex in West London used to a have while you wait service (well 2 hours) but they are long gone. I had all 4 brakes on a car done, the results were fantastic. When i wanted a bike (B31) front brake skimmed no one could do it with the whole wheel, they all wanted the hub only. As this was the pressed steel hub that could be pulled out of round by the spokes this was useless. I bought a wheel complete with 8" CI brake which was a better fix.
If the hub has been skimmed it's not a show stopper, you can set the brake up, then see where the contact is and take some off with a file. Its a slow careful job but it works.
