My existing 376 has a long bell mouth with a gauze over the inlet but my new 376 has been supplied with a short bell mouth and no gauze.
Which one is best to use ?

Gauze can be restrictive and cause gross richness if you try to go fast.
An air filter is probably a better idea than either type of trumpet.

Started building in about 1977/8 a on average '52 A10 -built from bits 'n pieces never resto intended -maybe 'personalised'
Have a '74 850T Moto Guzzi since '92-best thing I ever bought doesn't need a kickstart 'cos it bump starts sooooooooo(mostly) easy

The gauze also acts as a spark arrester. Flame blow back through the carb. Burnt an A65 like that.

Dead right, the gauze type aren't air filters as such, but "flame traps". Normally found on big singles where a back fire would see flames all over the carb...
